I was given a ticket when I am 110% sure I stopped completely. how to beat a faulty running stop ticket?

12:00 a.m. I am the designated driver and I drop the last person off. I finish and I am heading home. I approach a hill where I see blue lights everywhere, so I am extra alert. I make a complete stop while driving to a stop sign and look both ways cautious of the police patrolling. I turn right after I complete the full stop behind the limit line. Then I notice the blue lights heading my way and an officer stops me. He tells me I kind of stopped but it was not complete. He looks me in the eyes and realizes I am not drunk, which I know he was stopping me for sobriety. I know it because I am stopped all the time even though I am the designated driver. I tell the officer respectfully I do not agree. I came to a complete stop. The officer is upset and ask for my information. I give it to him and he looks up my record. He notices that I am clean and I have never had a ticket in my life. Next thing I know he changes his story subtly and says I completely ignored the stop sign. He gives me a ticket saying I ran the stop sign. He could not get me for DUI so he goes out his way to say i made a rolling stop changing to not stopping at all. The whole time he is angry I did not comply. I was respectful. I told him i understand and i agree with whatever he said to me so he would not write me up for disorderly conduct. I am sure he did not record me speaking and he did have a dash camera to see me stop. I feel like I have more traffic rights driving in Italy. What should I do to win this case of injustice?
